Let’s celebrate!

Če je bila moja prejšnja objava nekoliko daljša, bom tokrat namenoma krajša. V resnici ni veliko za povedati – sonce, prijetnejše temperature, rojstni dnevi, skorajšnji začetek poletja,  opravljeni izpiti, razlogov za praznovanje ne zmanjka!

Da bi bila kos trenutni “zahtevni” situaciji, sem nujno potrebovala recept za torto, ki bo hiter, preprost, brez nepotrebnega pacanja v kuhinji, a hkrati zdrav in okusen. In zadovoljivega videza, kot se za “ta pravo” torto za praznovanje spodobi. In brez jajc ter mleka, da bo ustrezal vsem gostom. Spodnji recept je po mojem mnenju eden izmed boljših receptov za veganski biskvit, ki ga lahko uporabite na 100 različnih načinov. Seveda biskvit ni tako puhast in mehek kot smo ga vajeni pri navadnih torticah, ampak pri tej torti, v kombinaciji s sadnim nadevom in čokoladnim mousse-om, se je obnesel več kot odlično! Jajc in mleka ne boste pogrešali, obljubim!

Nadaljnja dobra stran omenjene torte je, da lahko recept prilagajate sezoni in se igrate s sestavinami. Glede na to, da je trenutno sladkih jagod v izobilju, sem za nadev uporabila domač chia jagodni džem (recept tu)+narezane jagode, seveda pa lahko poskusite s katerim koli drugim sadjem, marmelado (češnje, jagode, višnje, marelice…)… Lahko pa naredite dvojno količino čokoladnega mousse-a in ga del porabite za vmesni nadev. Hm, ali pa rikota+jagode+grški jogurt+malo medu, prav tako odlično!

In na koncu – čokoladni mousse, na katerega sem res res ponosna! Naj vas glavna sestavina – avokado, ne zavede, v končnem izdelku ga ne boste čutili, tortici pa doda tisto kremasto, čokoladno piko na i. Sama ga ponavadi naredim dvojno količino, saj ga polovica zmanjka še preden se torta ohladi ;). Recept spodaj!

Sun, (almost) summer vibes, birthdays, there are so many reasons to celebrate! Celebration time – cake time! This time I was confronted with a new challenge – finding THE perfect celebration cake recipe – the one that’s easy, quick, healthy and tasty. And looking good, it’s celebration cake after all! This recipe calls for only a few ingredients you most certainly have on hand. It’s vegan, so no dairy and eggs , but you’ll not miss them. Cake batter is not as fluffy as with usual sponge cake, but together with fruit filling and chocolate icing it’s just perfect!

What I especially like about this cake (besides its taste of course) is that you can adjust the recipe according to seasonal ingredients. No strawberries around? No problem, try the option with cherries, apricots or other berries. Or double the amount of chocolate mousse and use it as filling. Or try with berries + ricotta/cottage cheese  + greek yoghurt + honey combo, delicious as well! 

At the very end comes the very best – chocolate mousse. I’m really proud of this recipe, it makes the best cake icing recipe I’ve tried so far plus it’s incredibly easy, healthy (good fats only!), smooth and rich. All thanks to – avocado 😉 I usually have to double the amount as half of the mousse secretly  🙂 disappears before the cake chills.

“TA PRAVA” TORTA ZA PRAZNOVANJE – JAGODNA TORTA S ČOKOLADNIM MOUSSE-OM (V) /

PERFECT CELEBRATION CAKE – STRAWBERRY CAKE WITH CHOCOLATE MOUSSE (V):

Za biskvit (torta premera 20 cm, prb. 8-10 kosov)/ Cake ingredients (20cm in diameter, serves 8-10):

  • 1/2 skodelice* praženih lešnikov, zmletih v moko (lešnike za 10-12 min postavite v pečico, 180 stopinj, nato z drgnjenjem odstrnite lupinico in jih v mlinčku zmeljite v moko) / 1/2 cup* hazelnut flour (roast hazelnuts in the oven for 10-12 min, 180 degrees, then remove skins and grind into flour);
  • 1 ,5 skodelice polnozrnate pirine moke / 1,5 cup wholegrain spelt flour;
  • 100g kokosovega sladkorja ali brezovega sladila / 100g coconut sugar or xylitol;
  • 1/3 skodelice masla (vegansko ali navadno) /  1/3 cup butter (vegan or non-vegan);
  • 2JŽ* moke iz zlatih lanenih semen / 2tbsp* flax seed- flour;
  • 1 ČŽ* pecilnega praška / 1tsp* baking powder;
  • 1/2 ČŽ sode bikarbone /   1/2 tsp baking soda;
  • 1 skodelice rastlinskega mleka po želji (sojino, ovseno, mandljevo)/ 1 cup plant based milk of your choice (soy, almond, oat);
  • vanilija v prahu/ vanilla.

*1 skodelica=prb. 2,4 dcl, ČŽ=čajna žlička, JŽ=jedilna žlica

*1 cup= approx. 2,4 dcl, tbsp= tablespoon, tsp=teaspoon

Kako/ how to?

  1. V skledi zmešajte vse suhe sestavine. / Mix all the dry ingredients in a bowl.
  2. Dodajte mleko, maslo in narahlo premašajte vse sestavine z žlico. / Add milk and butter and gently mix everything with a spoon.
  3. Testo vlijte v pripravljen namaščen pekač in ga pecite na 180 stopinjah prb. 30-40 minut, dokler se zlato ne obarva, preverite z zobotrebcem. / Pour the batter onto baking tray (grease it beforehand) and bake for 30-40 min, 180 degrees or until golden, use toothpick to make sure it’s baked in the middle.

AVO

ČOKOLADNI MOUSSE/ CHOCOLATE MOUSSE

  • 1 izkoščičen zrel avokado / 1 ripe avocado, halved and pitted;
  • 3 JŽ 100% pravega, nesladkanega kakava / 3 tbsp unsweetened cocoa powder;
  • 4-5 JŽ riževega sladila (odvisno od okusa, lahko prilagodite) /  4-5tbsp rice malt syrup (you can easily adjust according to preferred sweetness);
  • 2JŽ kokosovega olja/ 2tbsp coconut oil;
  • ščepec vanilije v prahu/ pinch of vanilla;
  • ščepec soli/ pinch of salt.

Kako/ How to?

  1. Postrgajte avokado (najlažje kar z žlico), dodajte vse sestavine razen kok.olja v blender/mešalnik in miksajte do gladkega. Na koncu dodajte še kok.olje in ponovno zmiksajte. Mousse mora biti povsem gladek, svilnat, brez delcev. / Scoop out the flesh of the avocados and place in the bowl of a food processor, together with other ingredients except for the coconut oil.  Puree until smooth. Add remaining coconut oil and puree again, scraping down the sides of the bowl. Mousse should be silk and smooth, without smaller parts.

SESTAVLJANJE /TO ASSEMBLE:

  1. Počakajte, da se tortica ohladi, nato jo s sukancem ali nožem prerežite po širini na 2 dela. / Remove and cool completely in the pans on wire racks. Then, using sharp knife or/and thread divide the cake into two parts, lengthwise.
  2. Prvo bikvitno plast premažite s chia marmelado (recept tu), sadjem, mousse-om … / Place the first layer on your cake stand or serving plate and coat it with chia jam (recipe here), fruits, mousse or as you prefer!
  3. Na nadev previdno položite drugo biskvitno plast / Cover with second cake layer.
  4. Bogato premažite torto s čokoladnim mousse-om in dekorirajte po želji. / Smooth on the frosting – chocolate mousse and decorate as you wish.
